July 4th !

Ok, another month that is not hard to find a THEME.

And it seems to me, that this tea sounds like it should be a bit more sassy, less British, more…. AMERICAN.

So spike up the food and the decorations.

Easy to come up with appetizers !

And just as easy to come up with some creative drinks.  You can make it easy by just adding some colorful ice cubes to your favorite drink…

Or just some decorations…

Strawberry Mimosas. Pureé the berries with a little sugar or simple syrup and pour into glasses with chilled champagne.

But then why stop at decorations !!??!!

Spice up those drinks

 Intimidated?

 Check out this fun YouTube….

I thought the food should be livelier, but couldn’t bring myself to do sliders or wings.  But I’m usually about finger food, so I can ‘circulate’.  So here’s a few to try:

Mini hamburgers

Fired up Potato Salad.  Be creative with individual containers.

Barbecue, Bacon, and Blue Cheese Potato Salad

Ingredients:

7 large red potatoes, washed
5 slices cooked bacon, diced
1 cup mayonnaise
2 tablespoons barbecue sauce
2 tablespoons yellow mustard
2 celery ribs, diced
1/2 cup red onion, diced
1/4 cup parsley, chopped
1 tablespoon tarragon, chopped
1/4 cup blue cheese crumbles, garnish
salt and pepper to taste

Directions:

Fill a large stock with water. Add the red potatoes and bring to a boil. Boil the potatoes for about 35 minutes or until fork tender. Drain the potatoes and set them aside in a bowl to slightly cool before slicing into quarters.

Meanwhile, in a large bowl, combine mayonnaise, barbecue sauce, yellow mustard, salt and pepper. Add the sliced, cooled potato quarters, celery, red onion, parsley, tarragon, and bacon. Gently fold combine everything. Sprinkle blue cheese on top and serve immediately.

Spicy chili muffins – easy to find recipe.  But then add this:

Chipotle Butter

Ingredients

1.    ½ cup salted butter, at room temperature

2.  1 teaspoon finely minced chipotle pepper*

3.  1 teaspoon adobo sauce*

Instructions

In a small bowl, combine butter, chipotle, and adobo sauce, stirring until well blended. Transfer mixture to a piece of plastic wrap. Roll mixture into a log, wrap well, and twist plastic-wrap ends to seal.

Refrigerate until firm, approximately 2 hours. When ready to serve, slice into pats.

But of course we need a salad…

Just some good greens with Strawberries, Feta and Blueberries
